The diet followed by geese is a diet rich in figs, acorns and olives and cereals provided by the meadow.
By autumn-winter it is when the Iberian geese eat more food to accumulate fat reserves for migration. This is the time in which the liver becomes larger and fatty and time when the geese are slaughtered.
After removing the liver, it is seasoned and baked water bath and finally packaged.
