Front leg of the Acorn-fed Iberian pig, best-known as shoulder (paleta).
These free-range Iberian pigs have been roaming in grazing lands (DEHESAS) of the south of Extremadura and the north of Andalusia. They have been fed with cereals and exclusively with acorns and natural grass during the acorn-period (Montanera).
Maximum-quality shoulder, produced following natural and traditional procedures such as maturing processes in drying cellars.
The resultant product is afterwards cured in the same area, obtaining a genuine fragrant smell and taste as the weather conditions are the most suitable to get an exceptional product.
